Thanksgiving Mini Pumpkin Pies

Happy Thanksgiving from Eventful Life!

I have been trying to choose a fun new dessert for our Thanksgiving table this year.. and what’s more fun than something mini! 🙂

These Mini Pumpkin Pies were incredibly easy. Found on Bakerella– check this site out for more great recipes there is a whole section on bite-size food, perfect for parties!

Here’s all you need:

2 refrigerated ready-to roll pie crusts

8 oz. cream cheese, room temperature
1/2 cup sugar
1 cup canned pumpkin
3 eggs
1 teaspoon vanilla
1 teaspoon pumpkin pie spice
Pumpkin-shaped cookie cutter

Optional (Chocolate Decorating)
1/2 cup chocolate morsels
vegetable oil
re-sealable plastic bags

Directions From Bakerella:

Preheat oven to 350 degrees.
Use cookie cutter to cut 12 pumpkin shapes from each pie crust. You will need to roll the dough thinner than it comes out of the box.
Press dough shapes into a 24 cup mini muffin tray. (Make 12 at a time, alternating cups to make sure pie crusts don’t overlap each other.)
Apply egg whites from one egg to the top edges of each pie.
Mix cream cheese, sugar, canned pumpkin, remaining 2 eggs, vanilla and pumpkin pie spice together until thoroughly combined.
Spoon mixture into each pumpkin-shaped pie crust. ( I used an ice cream scoop!)
Bake for 12-15 minutes.
Remove pies to cool and repeat with second pie crust. Place the muffin tray in the freezer to cool it quickly for re-use.

Makes 24 pies. Keep refrigerated.

Now the fun part…how to decorate them! I saw a few varieties on the pinterest world such as:

Whip Cream on top from Make and Take

Hearts on top from Craft Foxes– doing these next time!

I finally decided on these pumpkin faces to appeal to the young kids at Thanksgiving!

At Girl’s Night Out we had many people asking us how we did our painted mason jars. Here’s a quick rundown of our project.

After purchasing our mason jars (we were able to get our jars at Kmart) We checked through the paint we had hanging around from previous projects and picked the colors we wanted to utilize at Girl’s Night Out. Grabbed a small paintbrush and we were good to go!

We painted the jars on the inside, making the paint job not perfect to get the rustic look we were going for. After a little drying time.. We were done!

At Girl’s Night Out we used them to hold some flowers and to spice up the tables!

Girl’s Night Out!!

Last night was our official premier of Eventful Life at Girl’s Night Out!

The Meadow Brook in Hanson has a beautiful function room that was perfect for our event!

Our goals were to tell our family and friend’s a little more about Eventful Life while giving them a great opportunity for some holiday shopping! Our three amazing vendors Stella & Dot, The Pampered Chef and  Scentsy were huge hits!

We really wanted to have some great choices on our raffle table: these homemade Chalkboard Wine Glasses were a favorite!








This blog will feature many more of our craft projects and ideas that you can make to add a personal touch to any home or party atmosphere!

Girl’s Night Out turned out to be a huge success! Thanks to everyone who came to support us, we are forever grateful for your encouragement as we start off on this new party planning adventure!
